Raw Linseed Crackers & Dip
Ingredients 2 cups linseed, 1 onion/1 red capsicum/1 green capsicum/5 tomatoes-quartered, 2 cloves garlic, 1/4 cup sun-dried tomatoes, soaked until soft, 1 red chilli, 1 tbsp italian dried herb mix, 1 tsp himalayan or celtic sea salt. (1/2 – 1 cup water) Method In a food processor, blend linseed and set aside. Mix all other ingredients in blender on med/high speed for a minute, then add linseed and water ensuring all ingredients are wet and well combined. If mixture is too dry add more water, if too moist, sit for 10 minutes. The tricky bit To make these cracker RAW (better for you and your digestion), they need to be dehydrated, (use a dehydrator on 100 deg c for 12 hrs) or put into oven overnight on 70 degrees for at least 12-14 hrs. They need to be completely dry. Spread mixture thinly out onto a baking tray (you may need two) If sticky, wet spatula for easier spreading. With a pizza cutter, score into cracker size to make it easier to break when dry. You may need to turn mixture over to dry out for a crispier cracker. Cashew Hommus Dip 1 cup raw cashews 400g can cannelli beans 100g cream cheese (opt) 1/4 cup tahini 1/3 cup lemon juice 2 garlic cloves, crushed 1/2 teaspoon salt 1/2 teaspoon cumin 1 red chilli 1-2 tbsp olive oil salt & pepper fresh parsley (optional) 1 Soak cashews for at least 3 hours 2 Drain and rinse cashews and beans a few times. 3 Place cashews and all remaining ingredients in a food processor. 4 Puree in the food processor until well blended – it will be thick. 6 Add bit water until desired texture. 7 Garnish with fresh parsley if desired. Sesame/Pumpkin Crunch
Blend seeds for a few seconds on medium speed or to desired mix. Don’t over do it and crush all the seeds up, you want some whole and some crushed up a little bit. 2 Cups Pepitas (pumpkin seeds) 3 Tblsp Sesame Seeds Then add liquid ingredients and mix slowly until its all blended through. 1 Tblsp Agave Syrup 1 Tblsp Organic Rice Syrup 1 Tblsp Organic Raw Honey The cooking can be tricky, to keep it raw for better nutrition (and makes it easier to digest and still tastes same as cooking it quick) you have to cook it slow in a low temp oven, until its completely dry. Cook on 70 deg C for about 10-12 hours (overnight), let cool, refrigerate, then cut into bite sizes. It should stay crunchy in the fridge for a couple of weeks. Enjoy this nutritious snack any time! CHOCOLATE ALMOND FUDGE Ingredients 1/3 cup Coconut Oil (tasteless) 2/3 cup Almond Spread (health section of supermarket) 1/4 cup Maple Syrup 1/4 cup Agave Syrup 1/2 cup Sifted Cacao Powder Method In a bowl mix almond spread, coconut oil and syrups together until creamy.
